Sous Chef (Relief Steward) (Odessa, Pearsall or Ozona, TX)

Our clients work hard to provide a safe and healthy environment for their employees who work around the clock on offshore structures and onshore facilities at remote locations in North America. Plan, prepare and serve quality meals and bakery items as directed by steward
Comply with customer nutritional contract standards when required
Enforced and maintain sanitation and hygiene standards while performing duties
Adhere to established schedule for serving meals timely
Maintain accurate meal and bunk rosters
Supervise on duty catering staff to ensure safe and eficient performance
Responsible for all cleaning and organization of work area
Control and maintain balanced inventories through proper storage and rotation of products
Responsible for timely wake-up duty for entire sleeping crew
Train utility personnel for promotability by demonstrating skills and duties
Develop behavior modeling and conduct to promote quality work, self-fulfillment and work ethic
Establish and maintain good customer relations through courteous daily contact with quality professional service
Communicate with others and actively listen with a professional and polite demeanor, handling sensitive issues with employees and/or customers with tact, respect, diplomacy, and confidentiality.
Exchange information with other employees using electronic devices (e.g., Nextel, pagers, two-way radios, email).
Partner with and assist others to promote an environment of teamwork and achieve common goals, providing assistance to coworkers and developing and maintaining positive and productive working relationships with other employees.
Act as a lead to other wait staff when serving food, assigning tasks and ensuring quality standards are met, including conducting meetings with servers.
Inspect grooming and attire of staff and ensure staff is working together as a team.
Monitor and evaluate operations against operating standards and coordinate activities of workers engaged in maintaining premises.
* Will work two weeks as a Steward and two weeks as a Night Cook/Baker per shift**
Must have a minimum of two (2) years cooking/baking experience
Ability to lift and carry using correct lifting techniques and appropriate equipment
Ability to carry out detailed instructions independently
Must have good communication skills
Must be able to read, write, and perform mathematical functions
Must have good organizational and supervisory skills
Must have ability to train employees
Must have basic knowledge in the safe and proper use of household persticides and cleaning chemicals.
Education and/or Experience:
Prefer basic training in prevention of foodborne illness, sanitation and personal hygiene
1 year supervisory/managerial experience
